About this wine

This cuvée comes from a small, historic parcel of Chardonnay where the deep-rooted vines give naturally low yields and great concentration. The grapes are partly fermented and aged in oak (about a quarter of the volume) with regular bâtonnage, and the rest stays in stainless steel on fine lees to preserve tension. The result is a wine that opens with notes of ripe citrus, white peach and honeysuckle, overlaid with chalk, smoke and a touch of toast. The palate is expansive yet finely etched, with a creamy texture and a very pure, mineral line that keeps it precise. It’s an excellent bridge between classic village Chablis and premier cru level, and versatile with grilled fish, poultry or richer seafood.

Tasting Note

Critics describe a luminous “green-gold” wine whose delicate bouquet sometimes shows honeysuckle, with a fine, enveloping palate and a very pure mineral spine.

In the glass

Lustrous green-gold, slightly deeper than the regular Chablis.

In the nose

White flowers, citrus, subtle ripe stone-fruit and gentle oak spice over crushed shell and chalk.

On the palate

Textural and mouth-filling, with citrus and peach wrapped around a core of limestone minerality and a long, sapid finish.

Bernard Defaix

Domaine Bernard Defaix is a respected family estate in Chablis, farming primarily on the left bank with important holdings in Côte de Léchet. Practising organic viticulture and careful, low-intervention winemaking, they craft Chardonnays that marry classic Chablis tension and saline minerality with just enough texture and weight. Old-vine cuvées bring extra depth, but the overall style stays pure, precise and very gastronomic.
