About this wine

Bêtes à Bon Dieu is a mature Champagne from Adrien Salot, combining the generosity of Meunier with the freshness and lift of Chardonnay. The fruit is fermented with indigenous yeasts and handled with minimal intervention, followed by maturation in steel and oak and extended ageing in bottle. The aromatic profile has developed toward ripe yellow fruit, brioche and mineral notes, while the palate remains rounded and creamy without losing freshness. Released without dosage, it balances mature Champagne complexity with an unforced, energetic finish.

Adrien Salot

Adrien Salot is a small-scale grower in the western Vallée de la Marne, farming around 2.2 hectares around Chézy-sur-Marne. An oenologist and artist, he works with a minimalist approach in the cellar, using indigenous yeasts and very little sulphur to create highly individual, terroir-driven Champagnes that emphasise the character of each vintage.

Vinification

The Meunier-Chardonnay blend is spontaneously fermented with indigenous yeasts with completed malolactic conversion, matured in stainless steel and oak, then aged about 24 months on lees before further bottle ageing and released unfiltered and without dosage.
