About this wine

Herbes Folles is a rare, mature expression of Chardonnay from Adrien Salot and produced in very limited quantities. Indigenous-yeast fermentation, completed malolactic conversion and extended maturation in both steel and oak give the wine considerably more breadth and complexity than a straightforward Blanc de Blancs. Long bottle ageing has further developed its savoury, vinous character while preserving a core of limestone freshness. White fruit and flowers are joined by mineral, almond and evolved pastry tones, making this a serious table Champagne for richer seafood, poultry and mature cheeses.

Tasting Note

Critics describe white fruits, delicate flowers and a pronounced mineral note, with a creamy palate, excellent balance and freshness extending through a long finish.

Deep lemon-gold with a fine, persistent mousse.

White peach, ripe apple, delicate flowers, almond, chalk and mature pastry notes.

Creamy and expansive, with mature Chardonnay fruit, mineral tension and a long, fresh finish.

Adrien Salot

Adrien Salot is a small-scale grower in the western Vallée de la Marne, farming around 2.2 hectares around Chézy-sur-Marne. An oenologist and artist, he works with a minimalist approach in the cellar, using indigenous yeasts and very little sulphur to create highly individual, terroir-driven Champagnes that emphasise the character of each vintage.
