About this wine

Initiation is the gateway into Adrien Salot’s small-production grower Champagne range, but it already displays the domaine’s uncompromising approach to terroir and cellar work. The wine combines Meunier and Chardonnay from Salot’s fossil-rich limestone, clay and sandy soils in the western Vallée de la Marne. Spontaneous fermentation with indigenous yeasts, minimal sulphur and extended ageing on the lees build complexity without sacrificing freshness, while a final dosage of only around 3–4 g/L leaves the wine precise and dry. The result is a versatile Champagne that moves from crisp orchard fruit and flowers toward almond, fine pastry and a persistent saline finish.

Tasting Note

Critics describe green apple, pear, white flowers and fresh almond over a clear mineral backbone, with a dynamic, linear palate, vibrant freshness and a distinctly saline finish.

Adrien Salot

Adrien Salot is a small-scale grower in the western Vallée de la Marne, farming around 2.2 hectares around Chézy-sur-Marne. An oenologist and artist, he works with a minimalist approach in the cellar, using indigenous yeasts and very little sulphur to create highly individual, terroir-driven Champagnes that emphasise the character of each vintage.

Vinification

The Meunier-Chardonnay base is spontaneously fermented with indigenous yeasts, made with minimal sulphur and no fining or filtration, then aged for roughly five years on lees and finished at around 3–4 g/L dosage.
