About this wine

Domaine Bernard Defaix farms its Chablis vines organically on clay-limestone soils rich in Kimmeridgian fossils, then vinifies this cuvée in stainless steel to capture precision and freshness. The 2023 Chablis is bright and linear, with notes of lime, grapefruit, green apple and white blossom over a clear saline backbone. The palate is tonic and finely structured, with vibrant acidity and a mouth-watering, stone-tinged finish. It’s spot-on as an aperitif and pairs effortlessly with oysters, shellfish and simply grilled fish. Drink young for its energy, or over a few years for a slightly rounder profile.

Bernard Defaix

Domaine Bernard Defaix is a respected family estate in Chablis, farming primarily on the left bank with important holdings in Côte de Léchet. Practising organic viticulture and careful, low-intervention winemaking, they craft Chardonnays that marry classic Chablis tension and saline minerality with just enough texture and weight. Old-vine cuvées bring extra depth, but the overall style stays pure, precise and very gastronomic.
