About this wine

“Sous Bois” is a small-production cuvée from Belgian producer Cruysem, based on classic Champagne grapes and aged extensively in oak and on lees. The wine shows ripe apple and pear, citrus peel and brioche, with hints of vanilla, spice and a nutty, oxidative complexity from barrel ageing. The palate is structured and gastronomic, with fine mousse, good depth and a dry, lightly salty finish that pairs well with richer dishes.
