About this wine

This Rosé de Macération is produced entirely from Pinot Noir grown in two Grand Cru parcels in Verzy, on the northern Montagne de Reims. Rather than blending white Champagne with still red wine, Yaël and Jonathan Sacy make the wine as a true rosé de saignée, allowing the Pinot Noir to remain in contact with its skins for more than two days before fermentation. Spontaneous fermentation and naturally completed malolactic conversion preserve a direct expression of the fruit, while bottling without fining, filtration or dosage gives the finished Champagne a particularly pure, vinous personality. Sour cherry, wild strawberry and raspberry leaf are joined by subtle spice, with a fine mousse and natural freshness keeping the generous Pinot Noir fruit in balance.

They bottle precise, low-dosage Champagnes and still Coteaux Champenois that explore specific lieux-dits and grape combinations, from Chardonnay-based Blanc de Blancs to structured Blanc de Noirs. The wines are modern in spirit – vivid, detailed and terroir-conscious – while remaining firmly rooted in Champagne’s craft.
