About this wine

Subsidium Riserva Nature is Cherubini’s top cuvée, a Metodo Classico from Chardonnay and Pinot Nero in roughly equal parts, sourced from clay-limestone soils in the hills east of Brescia. The two varieties are harvested between late August and early September; Pinot Nero is very gently crushed, while Chardonnay is soft-pressed. Each ferments spontaneously in concrete tanks with indigenous yeasts, the base wines rest separately over winter, and the blend is assembled in late spring for tirage. The wine then spends a minimum of 60 months on the lees before disgorgement, with no dosage and the bottle topped up with the same wine. In the glass it appears deep golden with ochre highlights and a fine, persistent mousse; aromatically it shows intense floral and ripe-fruit tones framed by mineral and lightly oxidative notes. The palate is rich, soft and powerful yet kept in check by a strong fresh-salty line and firm structure, making it a gastronomic, table-focused sparkling wine.
