About this wine

Sui Generis is Cherubini’s entry – but still serious – Blanc de Blancs, produced from pure Chardonnay grown on clay-limestone soils in the Brescian hills, just outside the Franciacorta DOC boundary. Grapes are softly pressed and undergo spontaneous fermentation in concrete tanks for about 20 days, after which the base wine rests in concrete until tirage. The wine is then refermented in bottle by Metodo Classico and aged for at least 36 months on the lees, with no dosage and topping up at disgorgement done with the same wine. In the glass it shows a pale straw-gold colour with a fine, persistent perlage; the nose offers refined aromas of white flowers, green apple, citrus and exotic fruits alongside subtle yeasty/bread-crust notes. The palate is dry and incisive, with vibrant acidity, a savoury mineral backbone and an elegant, persistent finish that makes it an excellent aperitif but also a versatile food sparkling.
